Malibu Spritzer

Nothing like a spritzer on a nice hot day. Since I don't like wine, I came up with this spritzer using Malibu. Nothing says class like a cocktail in a plastic cup Malibu Spritzer 1 oz Malibu Rum 3 oz blueberry, cranberry or other fruit juice splash of seltzer Combine and serve over ice. I usually buy a real good fruit juice. I've made it with cran-raspberry, or cran-strawberry juice and it's quite good. It's a really refreshing drink and sometimes I'm just not in the mood for the sweetness of a Malibu and coke and this hits the spot. In the summer we like to have cocktails on the veranda (aka the backyard).

FBF - Coco-Mint Mojito

I've decided to introduce Flash Back Friday (FBF) no it's not just a cheap way to produce filler for the blog. It's a way to revisit things that I make often and are our faves and perhaps I may have tweeked a bit - I'm always changing things up. So for my first entry I'm looking at you Coconut Mint Mojito. Check out the recipe here . Since we were away in San Antonio* for the official start of summer AKA Memorial Day weekend. This past weekend we broke out the coconut/Malibu/mint.  I have to say this recipe is excellent. We've tested it out on some guinea pigs um I mean friends and they also really liked it. I have still not tried it using the simple syrup - I know I'm just too lazy. We used light coconut milk. I do have to say it is better with the full fat (sorry). Aruba Cocktails

We just got back from Aruba (see you didn't even know I left did you?). The food there is just absolutely delicious.  We ate at a Belgium place, Italian, and French.  We really did absolutely nothing and it was wonderful.  The Sous Chef wanted to take a surf lesson but "surf wasn't up." We were going to go to the natural pool but it was a four-hour tour and we didn't want to commit ourselves so we just went to the beach.  I read 4 books - doesn't sound too impressive until I tell you that one was a 600 pager. The Sous Chef was also asked if he wanted his hair braided - he declined. But we did spend some time sampling the different cocktails... Coco-Mint Mojito

I first had a Coconut Mint Mojito at this place called Havana , which was right by former work.  We just happened upon the place one day (after a long tough day) and I tried their Mojito.  They had several different kinds but I thought the coconut one sounded best. It was absolutely delicious. Since then I've been wanting to try to make them myself.  I did some investigation on the webby, web and found a few possibilities here and here . So off I went experimenting... Sorry the first one was drank before I could take a photo.  See this was all that was left... Judging by the empty glass, we got it right on the first try! But here's a pic of the second batch.
