Mushroom Quiche

I had an excess of eggs and some mushrooms. I thought it would be nice to make a mushroom quiche and here's what I found... What is that in the center?? Scroll down to see  Mushroom Quiche (Adapted from Martha Stewart ) 1 pie crust 2T olive oil 2 shallots, thinly sliced 2 clove garlic, minced 1lb mushrooms, quartered (Baby Bellas or White Mushrooms) fresh thyme 1t dried sage 1/4 t fresh nutmeg 1/2 c white wine 1/2 c milk 1/2 c heavy cream 3 eggs 1/4 c parsley, chopped 6 oz (1 1/2 c) cheese (Gruyere, Fontina, Colby) grated salt/pepper Have a blind baked pie crust cooled. Place shallots, 1T olive oil, and salt in a skillet. Saute until softened. Add garlic and cook until fragrant. Set aside in bowl. Add remaining olive oil to skillet. Add mushrooms, thyme, and sage. Cook about 8-10 minutes until mushrooms release their liquid. Add white wine and let cook until almost all evaporated. Set aside. Add salt/pepper. Lemon Tassies

What is a tassie anyway? I looked on the web of knowledge and the definition is a tass (real helpful huh?). Then if you look up tass it says it is a goblet or what is in the goblet - as small draught. The British version says that it is a native of Tasmania. Well none of these definitions quite fit these little lemon filled pastries. Lemon Tassies (Adapted from Martha Stewart ) Crusts: 5T butter, cut into chunks 1c flour 3T sugar 1 egg yolk 1t vanilla 1t lemon zest 1/2 t salt 1-2T lemon juice Filling: 8oz cream cheese 1/3 c sugar 1 egg 2T lemon zest 2T lemon juice 1t vanilla Lightly grease mini-muffin tins. Set aside. In a food processor pulse the butter and flour until it looks like bread crumbs. Add sugar, egg yolk, vanilla, zest, and salt. Process until incorporated. Chocolate Creme de Menthe Cake

We were invited to our neighbors for a barbecue and I was charged with dessert. No big deal but several of the members are a foodie crowd. Well I was all set to make this delicious looking crepe cake. What is a crepe cake you ask - it's layers of crepes and in between is a layer of chocolate cream and creme de menthe cream - well in this instance anyway. Sounds great huh? Well it was not so great. I mixed up the creams to have the flavors blend and I set about making the crepes.  I've made crepes before but not for a while. These were a total crepe-tastrophe. They just stuck to the pan and I couldn't flip them. Now I had these two creams sitting in the refrigerator, the bowls chilling in the freezer and nothing to do with them. I decided to just go with two simple chocolate layer cakes with chocolate cream on the inside and the cream de menthe on the outside. Well talk about making lemonade from lemons - this was totally that and more! Not a bad rescue Chocolate Crem...
