Banana Oatmeal Blueberry Bread

Why is Banana Bread called bread? It really is a cake, but I'll go along with the let's pretend that it's bread so that we think it's healthier idea. Add some additional fruit and some oats and we can kid ourselves some more... Banana Oatmeal Blueberry Bread (very loosely Adapted from Cooking Light) 3/4 c buttermilk 1/2 c rolled oats 1 3/4 c flour 1 t baking powder 1/4 t baking soda 1/2 t salt 3/4 c brown sugar 3 T canola oil 1 1/2 t vanilla 1 1/3 c mashed ripe bananas (about 3) 2 eggs 1 1/2 c frozen blueberries In a bowl mix buttermilk and oats and let soak about 10-15 minutes. In a separate bowl mix together flour, baking powder, baking soda, and salt. Set aside. To the oat mixture add brown sugar, oil and vanilla. Stir together. Add the bananas. Mix in eggs. Fold in the flour mixture. Gently fold in the blueberries. Pour batter into a 9x5 greased pan and bake at 350 until wooden toothpick inserted comes out clean. Cool for 15 minutes on wire rack...

Chocolate Hazelnut Banana Bread

Yes I'm in that situation again where I have some bananas getting a little overripe. What to do?? Yet a different banana bread recipe! Chocolate Hazelnut Banana Bread (Adapted from Cooking Light) 5T Nutella 1 t canola oil 3 T canola oil 3 T butter 1/2 c brown sugar 2 medium bananas 2 eggs 1 1/2 c flour 3/4 t baking soda 1/2 t baking powder 1/2 t salt 2/3 c buttermilk 1 oz milk chocolate Combine Nutella and 1t oil in a small bowl. Microwave for 30 seconds or until melted. Stir and set aside. Combine 3 T oil, butter, brown sugar and bananas in a large bowl. Beat until well blended. Add eggs 1 at a time; mixing well after each addition. In a small bowl combine flour, baking soda, baking powder, and salt. Add flour mixture, alternating with the buttermilk and ending with flour. Pour 1/2 of batter into a greased loaf pan. Spread Nutella mixture over batter. Pour in remaining batter. Use a spatula to swirl batter. Bake at 350 for 55 minutes or until tooth pick in...

Bananas Foster Bread

Oh no not ANOTHER banana bread recipe. I can't help it, I always seem to have bananas that get ahead of me. My intentions are good but I forget about them. Before you know it they are turning black. This one has it's own good quality - hey it's got booze in it. How can you go wrong with that?? Bananas Foster Bread (Adapted from Cooking Light ) 1 1/2 c mashed bananas (about 3) 1 c brown sugar (divided) 5 T butter 1/4 c dark rum 1/3 c buttermilk (or yogurt) 2 eggs 1 1/2 c flour 1/4 c ground flaxseed 3/4 t baking soda 1/2 t salt 1 t cinnamon 1/4 t allspice Glaze 1 T butter, melted 1 T dark rum 1/3 c confectioner's sugar In a skillet combine bananas, 1/2 c brown sugar, butter, and rum. Cook until mixture begins to bubble. Remove from heat and add buttermilk to cool it down. Transfer to mixer. Add the remaining 1/2 c of brown sugar and the eggs. Sourdough Banana Bread

I was a little hesitant with this recipe. I make a good banana bread and did I really need a different one - well apparently I did. It's another one from that Step-by-Step Breads book that I keep telling you to get. I think at this point I've tried almost every recipe in there. Sourdough Banana Bread (Adapted from Step-By-Step Breads ) 2 1/4 c flour 1 t baking powder 1 t salt 1/2 t baking soda 1 t cinnamon 1 t nutmeg 1 egg 1/4 c sugar 1/2 c brown sugar 1/3 c oil 1 c sourdough starter (at room temperature) 1 c mashed ripe banana (about 3) 1 t vanilla 1/2 t lemon zest 1 1/2 c raisins 1 c nuts (optional) In a small bowl mix dry flour, baking powder, salt, baking soda, cinnamon, nutmeg. Set aside. In a mixer beat egg. Add sugars and oil. Add the sourdough starter, bananas, vanilla, and lemon zest. Mix until blended. Gradually add the flour until mixed in. Stir in raisins. Pour into a 9x5 loaf pan. Bake at 350 (325 for glass) for 1 hour 10 min or until too...

Banana Bread Again (but different)

You may say this is cheating on a blog entry since I've done this recipe already but...it is really a delicious recipe. And this time I used cultured buttermilk instead of yogurt (because I had some) and last time I made it as a chocolate banana bread. So here it is again but different: Chocolate Banana Bread (adapted from The Bread Book ) 4 T butter (softened) 3/4 c sugar 3 medium bananas 1 egg (room temperature) 1/3 c cultured buttermilk (room temperature) 1t vanilla 1 3/4 c flour 1 1/2 t baking powder 1/2 t baking soda 1/2 t salt 2 c chocolate chips (I'm usually a little more generous than that) Grease a loaf pan. Cream butter and sugar together. While butter is creaming, in a separate bowl mix flour, cocoa powder, baking powder, baking soda, and salt.  To the creamed butter and sugar, add the bananas and mix until bananas are mashed.  Beat in egg, buttermilk, and vanilla. Gradually add flour mixture to wet mixture.  Stir in chocolate chips....
