Bananas Foster Bread

Oh no not ANOTHER banana bread recipe. I can't help it, I always seem to have bananas that get ahead of me. My intentions are good but I forget about them. Before you know it they are turning black. This one has it's own good quality - hey it's got booze in it. How can you go wrong with that??


Bananas Foster Bread (Adapted from Cooking Light)

1 1/2 c mashed bananas (about 3)
1 c brown sugar (divided)
5 T butter
1/4 c dark rum
1/3 c buttermilk (or yogurt)
2 eggs
1 1/2 c flour
1/4 c ground flaxseed
3/4 t baking soda
1/2 t salt
1 t cinnamon
1/4 t allspice

Glaze
1 T butter, melted
1 T dark rum
1/3 c confectioner's sugar

In a skillet combine bananas, 1/2 c brown sugar, butter, and rum. Cook until mixture begins to bubble. Remove from heat and add buttermilk to cool it down. Transfer to mixer. Add the remaining 1/2 c of brown sugar and the eggs.
Meanwhile in a separate bowl mix dry ingredients together.

Mix the banana mixture until combined. Add flour to banana mixture and mix until just blended. Pour into a greased 9x5 loaf pan. Bake at 350 (325 if glass) for 1 hour or until toothpick comes out clean. Cool on rack in pan for 10 minutes. Turn out onto cooling rack.

Meanwhile  combine glaze ingredients and drizzle over warm cake.

I'm not such a good drizzler. I sort of pour it over and it didn't look so good. Then I spread it a little and it didn't look too much better. But the taste - YUM. I also used my long skinny loaf pan - thought I did some weirdo special effect with the photo huh?

New Kid on the Block

Mensa Member?

I think Mickey is a member of Mensa. We heard him last night but could not determine where he was in the kitchen (or should I say the Sous Chef could not locate him - I certainly was not looking). He had been lurking in the toaster cabinet the night before and averted the glue trap. This is absolute torture. Still no cooking going on.

Nothing in the Larder

Well there's nothing left in the freezer except some peeps from Easter.  Shockingly they are good until 2016 - that's reassuring huh? This raises a few questions: Why do I keep peeps in the freezer? Well they are delicious frozen.  I don't know why I havent eaten them yet??? Why is the freezer empty? because we are getting a new refrigerator. This one is 15 years old and quite frankly it owes us nothing.  Every once it a while it lets out a big sigh. We figured we better replace it before it lets out one last final sigh. Why am I calling it the larder? Well I think of that Simpson's episodes where Moe calls Homer fancy for calling the garage a garage and not a car hole. I know it's not the same but it just makes me laugh and gives me an excuse to find that clip on youtube. So the delivery is set for the end of the week.
