Guaca Guaca



Don't tell the kids but sometimes we have Guacamole for dinner. They'll want to know why this wasn't allowed when they were home. And we won't even discuss in the hot summer when we have ice cream for dinner!  I'm thinking this way - it's avocado (very healthy), lime juice (Vitamin C), and cilantro (it's green=must be healthy). OK so maybe you're not buying that guacamole is a good dinner so I won't even try to sell you on the ice cream for dinner thing. But guacamole does taste good and it's quick to put together.  Besides it's usually a Friday night meal. You know you get home from work; it's been a long week. You really don't need a recipe.  It's just a matter of adding ingredients until it tastes right.

Guacamole

1 shallot
4 avocadoes
lime juice
hot sauce
cilantro
salt

Buzz shallot in food processor.  Add remainder of ingredients and pulse until combined.  Taste and adjust seasoning.

Now I know authentic guacamole is really not made in the food processor. It's made using a mortar and pestle. My mortar and pestle is not big enough to make a whole batch of guacamole and I must confess I prefer guacamole smooth rather than chunky. I know, I know chunky is more authentic.  But I'm not going for authentic here. I'm going for a quick "dinner."

New Kid on the Block

Mensa Member?

I think Mickey is a member of Mensa. We heard him last night but could not determine where he was in the kitchen (or should I say the Sous Chef could not locate him - I certainly was not looking). He had been lurking in the toaster cabinet the night before and averted the glue trap. This is absolute torture. Still no cooking going on.

Nectarine Salsa (or is it Seltzer*)

Now that the tomatoes are in full swing, it's time to make salsa. This is a good alternative to plain tomato salsa. I like this salsa a little more on the sweet side so you might want to use less sugar. The Sous Chef says he would like it with a little bit of heat. Either way it's still delicious. Nectarine Salsa 2 nectarines 2 T sugar 2 tomatoes 1 shallot Salt Peel nectarines and tomatoes If you don't have this handy-dandy peeler , I recommend you get one. Otherwise you will have to drop the nectarines and tomatoes in boiling water for a few seconds.  Immediately put them in an ice-water bath.  They should then slide out of their skins. Do a large dice on the nectarines and place in a bowl. Sprinkle sugar on the nectarines and allow the fruit to macerate for a few minutes.  Meanwhile slice the top of the tomato off and gently squeeze out some of the seeds.
